Honey Chipotle Chicken Tacos
These Honey Chipotle Chicken Tacos were definitely my favorite recipe out of the bunch. I love making recipes where all I have to do is put something in the slow cooker, it makes dinners super easy in my house. Since I’m so busy, I don’t always have the time to stand in the kitchen and whip up an amazing dinner. Being able to put something in the slow cooker and not have to stand and watch over it is such a lifesaver. I’m able to continue going about my day while my dinner cooks, which allows me the reprieve of not having to worry about it later in the day.
This chicken is extremely versatile! There are so many options – tacos, burritos, tostados, etc. This recipe is perfect for meal prepping, since you can have a different dinner every day of the week with this. When I made my chicken, I decided to put it in a taco salad and it was DELICIOUS!
Honey Chipotle Chicken Tacos
Equipment
- 1 Slow cooker 5-to-8-quarts
Ingredients
- 1½ lbs Chicken breasts boneless, skinless
- 3 tbsp Honey
- 1 tsp Onion powder
- 1 tsp Garlic powder
- ½ tsp Ground cumin
- 1 tsp Kosher salt
- 1 to 4 Chipotles in adobo finely chopped
- 2 tbsp Adobo sauce
- 1 Lime juice freshly squeezed
- Warmed tortillas for serving
Instructions
- Combine the chicken, honey, onion powder, garlic powder, cumin, salt, chipotle chiles, lime juice, and adobo sauce in slow cooker. Stir well.
- Cook for at least 3 hours and only up to 5 hours on low. If it's more convenient, you can let the slow cooker switch to warm after 5 hours. The dish will hold on warm for about another 3 hours before the chicken starts to become quite dry.
- Using two forks, coarsely shred the chicken in the sauce. Taste and add more salt or lime juice if necessary. Serve in tortillas with toppings of choice.
