Honey Chipotle Chicken Tacos

This is a very versatile recipe that can be used for tacos, burritos, tostados, taco salads, or even burrito bowls!

  • 1 Slow cooker 5-to-8-quarts

Ingredients

  • lbs Chicken breasts boneless, skinless
  • 3 tbsp Honey
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • ½ tsp Ground cumin
  • 1 tsp Kosher salt
  • 1 to 4 Chipotles in adobo finely chopped
  • 2 tbsp Adobo sauce
  • 1 Lime juice freshly squeezed
  • Warmed tortillas for serving

Instructions

  • Combine the chicken, honey, onion powder, garlic powder, cumin, salt, chipotle chiles, lime juice, and adobo sauce in slow cooker. Stir well.
  • Cook for at least 3 hours and only up to 5 hours on low. If it's more convenient, you can let the slow cooker switch to warm after 5 hours. The dish will hold on warm for about another 3 hours before the chicken starts to become quite dry.
  • Using two forks, coarsely shred the chicken in the sauce. Taste and add more salt or lime juice if necessary. Serve in tortillas with toppings of choice.
