This slow cooker Caesar Chicken can be eaten in so many different ways. You can try it on a sandwich, over some rice/pasta/quinoa, or even on a salad! The opportunities for this one are endless!

Ingredients
6Medium chicken breasts
¾cupCaesar dressingplus extra for serving
3tbspAvocado oil
3tbspDijon mustard
2tbspMinced garlic
2tbspLemon juice
2cupsChicken broth
½tspBlack pepper
Chopped parsleyfor serving
French hoagie rolls or baguettesfor serving
2cupsShredded mozzarella cheesefor serving
Instructions
Prepping
Place chicken breasts in a freezer bag.
Whisk together caesar dressing, avocado oil, dijon mustard, minced garlic, lemon juice, chicken broth, and black pepper and pour into the bag.
Freeze.
Cooking
Thaw chicken overnight.
Place in slow cooker. Cook on low for 6 hours until chicken is cooked through and shreds easily.
Remove chicken and shred.
Return to the slow cooker, adding extra chicken broth or dressing if the mixture seems dry.
Place shredded chicken on rolls or baguettes. These can either be open-faced or as traditional sandwiches.
Top with mozzarella cheese and bake at 400°F for 8-10 minutes until cheese is melted. Top with parsley and serve.
