6 Quick and Easy ALDI Freezer Meals You Have to Try

Have you ever come home from a long day at work to absolutely dread having to cook a whole meal from scratch? The couch is calling your name…but sadly so is the kitchen. That’s why freezer meals have become such a staple in my house. And to top it all off, these freezer meals can be cooked in the slow cooker which makes the whole process even easier!

You can prep each of these recipes months ahead of time. All you need are your ingredients and some freezer bags! I was able to find my ingredients at ALDI’s, which means these recipes aren’t just easy, but they won’t break the bank either. All 6 of these recipes took me a little over an hour to prepare (which means it only takes around 10-15 minutes of prep time per recipe!) If that doesn’t define quick and easy, I don’t know what does!

When you’re ready to cook the freezer meal, all you have to do is take it out of the freezer the night before so it can defrost. Once they’re defrosted the next morning, all you have to do is stick them in the slow cooker and voila!

Whether you’re cooking for a family or just for yourself, these freezer recipes are guaranteed to make cooking just a little bit easier! Here are some freezer meals that I’ve tried and loved – There are recipes to suit every family!

  • 1 Slow cooker

Ingredients
  

  • 1 ½ to 2 lbs Boneless pork shoulder or butt roast
  • 1 Yellow onion sliced
  • 12 oz Root beer (regular, diet, or Zevia)
  • 1 ½ cups Ketchup
  • 6 tbsp Brown sugar
  • ½ cup Water
  • 2 tbsp Apple cider vinegar
  • 1 ½ tbsp Worcestershire sauce
  • 1 ½ tsp Dijon mustard
  • 2 tsp Smoked paprika
  • ¼ tsp Cayenne
  • ¾ tsp Black pepper
  • ¾ tsp Garlic powder
  • ¾ tsp Onion powder
  • 1 tsp Salt
  • 1 package Buns for serving
  • 1 Pickle for serving

Instructions
 

Prepping

  • Slice onion and add to a freezer bag. Add pork roast and pour in root beer. Freeze.
  • Whisk together ketchup, brown sugar, water, apple cider vinegar, Worcestershire sauce, dijon mustard, smoked paprika, cayenne, black pepper, garlic powder, onion powder, and salt for BBQ sauce. Pour into a separate freezer-safe container and freeze.

Cooking

  • Place pork into the slow cooker frozen (no need to thaw). Cook on low for 10 hours.
  • While pork is cooking, thaw BBQ sauce in the refrigerator.
  • When pork is done, drain most of the liquid and shred meat.
  • Return to the slow cooker and stir in BBQ sauce. Heat through.
  • Serve on buns with pickles.

  • 1 Slow cooker

Ingredients
  

  • ¼ cup Butter cubed
  • 32 oz Frozen cubed hash browns
  • 12 oz Frozen corn
  • ½ tbsp Dried minced onion
  • 1 tsp Black pepper
  • 2 tsp Salt
  • 4 tsp Powdered chicken bouillon
  • 2 cups Diced ham
  • 4 cups Water
  • 3 cups Milk
  • 3 tbsp Cornstarch
  • Shredded cheddar cheese for serving
  • Sliced green onions for serving

Instructions
 

Prepping

  • In a freezer bag, place cubed butter, hash browns, frozen corn, minced onion, pepper, salt, bouillon, and ham.
  • Place in freezer.

Cooking

  • Place contents of freezer bag into large slow cooker. Add water and milk.
  • Cook on low for 8 hours, until potatoes are tender.
  • Whisk cornstarch with 2T water and stir into soup.
  • Turn to high and cook until soup is thickened.
  • Serve with cheese and green onions.

Ingredients
  

  • 1 large Sweet potato peeled and cubed
  • 1 Zucchini chopped
  • 1 Onion diced
  • 2 Red or green bell peppers chopped
  • 3-4 large Chicken breasts cubed
  • 6 oz Water
  • 6 oz Tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tbsp Brown sugar
  • 1 tbsp Dijon mustard
  • 2 cloves Garlic minced
  • 1 ½ tsp Salt
  • ½ tsp Pepper
  • 1 cup Chicken broth for cooking
  • Hot sauce for serving
  • Crusty bread for serving

Instructions
 

Prepping

  • Place sweet potato, vegetables, and chicken into freezer bag.
  • Whisk remaining ingredients until combined; pour into bag. Freeze.

Cooking

  • Place into a large slow cooker frozen. Add 1 cup chicken broth.
  • Cook on low for 8 hours or until chicken is cooked through and vegetables are tender.
  • Serve in wide bowls with hot sauce and crusty bread for dipping.

  • 6 Salmon filets (~6 oz each)
  • ½ cup Orange juice
  • 1 tbsp Cornstarch
  • cup Soy sauce
  • 2 tbsp Olive oil
  • cup Brown sugar
  • 1 tbsp Lemon pepper seasoning
  • 1 tsp Sriracha
  • 3 cloves Garlic minced
  • 1 tsp Ginger minced or grated
  • Hot cooked rice for serving

Instructions
 

Prepping

  • Place the salmon in a freezer bag.
  • Whisk the remaining ingredients together and pour them into the bag.
  • Freeze flat, ensuring salmon is in an even layer.

Cooking

  • Thaw in refrigerator overnight.
  • Place salmon skin-side down on a baking sheet covered with foil. Discard marinade.
  • Bake at 400°F for 20 minutes or until salmon flakes easily with a fork. Thin filets may take less time.
  • Serve with rice.

  • 6 Medium chicken breasts
  • ¾ cup Caesar dressing plus extra for serving
  • 3 tbsp Avocado oil
  • 3 tbsp Dijon mustard
  • 2 tbsp Minced garlic
  • 2 tbsp Lemon juice
  • 2 cups Chicken broth
  • ½ tsp Black pepper
  • Chopped parsley for serving
  • French hoagie rolls or baguettes for serving
  • 2 cups Shredded mozzarella cheese for serving

Instructions
 

Prepping

  • Place chicken breasts in a freezer bag.
  • Whisk together caesar dressing, avocado oil, dijon mustard, minced garlic, lemon juice, chicken broth, and black pepper and pour into the bag.
  • Freeze.

Cooking

  • Thaw chicken overnight.
  • Place in slow cooker. Cook on low for 6 hours until chicken is cooked through and shreds easily.
  • Remove chicken and shred.
  • Return to the slow cooker, adding extra chicken broth or dressing if the mixture seems dry.
  • Place shredded chicken on rolls or baguettes. These can either be open-faced or as traditional sandwiches.
  • Top with mozzarella cheese and bake at 400°F for 8-10 minutes until cheese is melted. Top with parsley and serve.

Ingredients
  

  • 1 lb Frozen tater tots
  • 12 Eggs
  • 1 lb Breakfast sausage cooked and crumbled, drained
  • 2 cups Shredded colby jack or cheddar cheese
  • 1 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 1 tsp Hot sauce if desired
  • Salt to taste
  • Pepper to taste
  • Sliced green onions for serving

Instructions
 

Prepping

  • Prepare a 9×13 freezer pan by spraying with cooking spray.
  • Layer tater tots in a single layer on the bottom of the pan. Top with cooked sausage (may also use cooked and crumbled bacon or diced ham).
  • In a bowl, whisk eggs until smooth. Add onion powder, garlic powder, hot sauce, salt, and pepper. Stir in 1 ½ cups of the cheese. Our egg mixture over the tots and sausage.
  • Top with remaining cheese. Cover with foil and freeze.

Cooking

  • Thaw in refrigerator overnight.
  • Bake covered at 350°F for 45-50 minutes. Remove foil at the end, if desired, to crisp cheese for a few minutes.
  • Cut into squares and serve with sliced green onion and additional hot sauce, if desired.
