1lbFrozen tater tots
12Eggs
1lbBreakfast sausagecooked and crumbled, drained
2cupsShredded colby jack or cheddar cheese
1tspOnion powder
1/2tspGarlic powder
1tspHot sauceif desired
Saltto taste
Pepperto taste
Sliced green onionsfor serving
Instructions
Prepping
Prepare a 9x13 freezer pan by spraying with cooking spray.
Layer tater tots in a single layer on the bottom of the pan. Top with cooked sausage (may also use cooked and crumbled bacon or diced ham).
In a bowl, whisk eggs until smooth. Add onion powder, garlic powder, hot sauce, salt, and pepper. Stir in 1 ½ cups of the cheese. Our egg mixture over the tots and sausage.
Top with remaining cheese. Cover with foil and freeze.
Cooking
Thaw in refrigerator overnight.
Bake covered at 350°F for 45-50 minutes. Remove foil at the end, if desired, to crisp cheese for a few minutes.
Cut into squares and serve with sliced green onion and additional hot sauce, if desired.
